Favourite recipes: high-protein cake with blueberries

The upcoming period, we share our riders’ favourite recipes. This time: a high-protein cake with blueberries. The perfect snack!

Ingredients for 1 cake (12 slices)

250 grams flour of choice

15 grams baking powder

100 grams oatmeal

100 grams cane sugar

100 ml water

50 grams whey high protein powder

1 banana

1 pinch losalt

2 biological eggs

75 ml walnut oil

250 ml Skyr

250 grams blueberries

Instructions

1. Preheat the oven to 180˚C.

2. Blend the banana with a hand blender.

3. Add, while blending, the banana and protein powder to the water. Keep mixing until the powder has been solved and it’s free of lumps.

4. Beat the eggs in a large bowl. Add, while beating, the sugar, walnut oil, banana and Skyr. Keep beating until thoroughly mixed and the sugar has been solved.

5. Add the flour (for example spelt or buckwheat) and the baking powder. Keep stirring until it’s solid.

6. Add the oatmeal and blueberries and stir.

7. Pour the batter into the greased cake tin.

8. Put the cake in the oven for 45-50 minutes. You know that the cake is ready when you put a wooden skewer into it and it comes out dry.
