Recipe: Apple pancakes

For elite athletes, it is important to eat a healthy and varied diet. After all, athletic performance is never achieved without proper nutrition. In this article we share the following recipe, created by food coaches Remco Henkes, Karin Lambrechtse and Franka van Hulten. Today on the Jumbo food menu: Apple pancakes!

Our riders are very impressed with the apple pancakes. They always really look forward to the recipe. The food coaches always get compliments on the delicious dish.

Apple pancakes

Apple pancakes ingredients:

  • 70 grams of Tritordium flour
  • 80 grams grated Elstar apples
  • 75 grams of organic egg
  • 50 grams of oat drink
  • 50 grams of skimmed milk from Official Food Partner Jumbo
  • 2 grams of salt
  • Speculaas spices or cinnamon (to taste)

Preparation:

  • Beat the eggs and add the milk and oat drink.
  • Little by little add the (sifted) tritordeum flour and whisk the batter until smooth.
  • Grate or cut the (peeled) apple and add to the batter.
  • For frying, use a hot frying pan, spray it lightly with olive oil and fry the pancakes until golden brown in turns. Serve as desired, for example with a little cottage cheese, fresh fruit salad and/or syrup.
